As you probably already know, both black and green tea come from the Camellia sinensis shrub. So why the difference in name, appearance, and flavor? The reason lies in the different leaf processing methods. Black tea undergoes a complete fermentation and oxidation process, then is dried, giving it an intense, complex flavor, dark color, and high caffeine content. Green tea is processed slightly differently – the leaves are merely heated , usually with steam or in ovens, and then dried. This processing method halts the fermentation process and contributes to the tea's subtle, slightly herbal flavor, straw color, and increased antioxidant content.
